Butler was able to keep up with her family’s protein needs with items such as eggs, beans, and roast chicken, which are all relatively inexpensive and can be prepared in multiple ways to ward off boredom. She purchased in season fruits and fresh vegetables, avoiding the “luxurious” options for nutrition packed, cheaper options such as bananas – which she was able to purchase at $0.49/pound. Butler recommends enriched pasta dinners for a filling, cheap, and carbohydrate rich dinner.
